Chef Jose Andres specializes in these deconstructed dishes below. As a simple definition, deconstructed food is the taking apart of a dish and then serving it in a totally unexpected way. For example, the Aceitunas Ferran Adria are liquified olives. They could possibly pass as the meat of an olive with their smooth, rounded look, but inside is a gel waiting to explode in your mouth. If you can get your mind around the odd texture of the little domes, they taste just like exactly like olives - the salty, intense flavor unique to olives.
