Red Potatoes

On January 2nd, 2020, I planted

a sack of sprouting small red potatoes that I had forgotten in the back of my cabinet. I prepped a huge trough I had with a covering of shredded cardboard, twigs, and 8 week old eggs. Then, layered it with dirt, laid the potatoes and one sprouted garlic clove. I figured that if they didn't grow, at least I would have an entire trough of compost by springtime.

Little did I know that the little sprouts would explode and overtake the garlic and the whole trough. And sure enough, by the end of March and through April, I have had fresh little red potatoes to harvest!
